Chicken Squash on Rice

Both acorn and butternut squash belong to the category of winter squash. It is best to bake winter squash as the flavor and texture remains intact. Winter squash is high on nutrients especially beta carotene. This chicken and winter squash recipe makes a delicious and healthy dinner.

Ingredients

  • 6 chicken breasts
  • Salt and pepper to taste
  • 1/3 cup maple syrup
  • 1/2 teaspoon dried thyme leaves
  • 2 tablespoons butter, melted
  • 1 acorn squash
  • 1 butternut squash

Directions


  1. Preheat oven to 400°F. Place the chicken in a roasting pan and season with salt and pepper. In a bowl, combine the maple syrup, thyme, and butter.
  2. Cut the acorn squash into rounds, deseed, and then halve each ring. Cut the butternut squash into wedges. Arrange the squash pieces around the chicken in the roasting pan and drizzle the maple syrup mixture on top.
  3. Bake, covered with foil for 40 minutes. Discard the foil and baste the chicken and squash with the maple syrup mixture in the pan. Bake for another 15 minutes or until the chicken and squash are cooked through.

Tips

Vary the chicken with some hot buffalo chicken sauces.
